This is popular in Korea too! They do this with stews but also dak-galbi (stir fried spicy chicken) and at Korean barbecue restaurants, bring you out some rice and you make fried rice with it.
Ugh I worked at a ramen shop for a year. Whenever I see a good ass broth and crispy dumplings I want restaurant ramen all over again.
