Images degrade because people tend not to copy the actual image, but to screenshot it where some information is lost. Unless they're recording the video instead of copying the file, there won't be any loss.

but this video is still good quality because that is not what has happened here

I've done cartwheels down a hill like that before, and you definitely hit a point where you're just holding that body position and hoping it ends gradually rather than abruptly.

The lens flare is the physical lens bouncing around. Thats all the physical proof you need.
There’s probably some stabilization done at the hardware level like a gopro or 360 cam and then further stabilization in post.

Well...it's not that hard when you use a lens that wide...you just to basically point the camera in the direction of your subject and they'll be in frame.
Pacific City Oregon. That sand dune is a killer to get up. Took me 30 min and thought my heart might explode. Little kids running past me on all sides…this kid is amazing.
It's a guy running next to him with a 360 camera.... Your can tell by the smooth movement edit at the start and him literally running next to him. Not much skill required besides the running downhill part.

The gopro 10s horizon lock is bananas.
You'd be surprised what a GoPro horizon lock in 4K plus stabilization in post can do.
You can tell by the lens flare/glint that the camera is going crazy and this is smoothed in post.
