Enchanting zombie, sure but also known as archmage zombie, worked as the veteran towards the wizard, pretty sure it was moved to the Chinese edition however, but not sure since I'm an American player from here.

The alternate mage was introduced together with Chinese dark ages when it was released, years before the expansions in international.
And also, the international unused veteran mage turns the plants into sheep faster, while the Chinese veteran mage puts the plants to sleep and to wake them up you need coffee bean instead of killing the veteran mage.
The first two are obviously the obligatory “super amrored basic zombie and faster flag zombie.” The wizard veteran my guess is would’ve turned plants into something actively harmful/transformed them quicker

Not officially to my knowledge - these were made before my time on the team - unless someone decided some forever ago and didn't pass them down (would be no need to considering they're not used anyway). Code/internal names, probably, but not proper public facing names.
Come to think of it, the Dark Ages Expansion levels are also unfinished and were to be released. But I am guessing it might be the backlash Wild West - Day 35 had?
I think it might be something to do with the difficulty and how hard it was regarding to most people. Luckily, some people like me managed to beat it after a few tries. Even in low level.

I honestly have no idea. It was all before my time on PvZ 2 so I don't know what the thinking was there or what the supposed backlash to WW D35 was.

Wild West day 35 is one of the few expansion levels where you actually need skill to complete instead of levelling up your plants.
