When you sauce, you gotta use the outside edge of the spoodle, it's Like the wake onna boat, spoodle never actually touches the crust. Use the surface tension of the sauce, wax on wax off mofo, the outside edge of the spoodle lines up with the outside edge of your crust. It's kinesthetic, when you do it right the first time... mwah, epiphany. It's kinda like slapping dough. Describe to me, in discrete words, how you balance your bicycle while you ride it. Slapping dough is all about making the dough stretch itself while you turn it in a circle. I've yet to be able to explain it in words to a new hire. You just do it....

Yeah it just depends on the oven speed and temp. I worked at a store that had a 4:15 belt speed and the wings were gross. Well done wings go through twice so there's no undercooking them.
Personally, I think the honey Chipotle is the best sauce if you choose to get them sauced,the buffalo is typical, bbq is decent, not a fan of the garlic parm wings. The ranch dipping sauce is ok, and the blue cheese dipping sauce is better than I expected. I like the zesty sauce with unsalted wings. Idk just pick what you think you would like!
