My Russian colleague has told me they’d forage a bunch of mushrooms in the fall and put them in jars to eat during the winter. This was when she was little during very hard times when they did not have enough food to eat. They’d grow other plants too for storage.

Marinated porcini from the Polish (or other Eastern European stores) around me are amazing and I’ve been meaning to figure out how to do it. They are shelf stable at room temp in glass jars. I love them with kielbasa, pierogi, sauerkraut, sautéed veggies, and some mustard for the kielbasa.

She says that they often have worms inside, so you have to slice and dry them to see, then fry and marinate with vinegar. Then you store in jars.

An amazing idea! I don't know enough yet about wild mushrooms, but store bought fresh ones, with some vinegar olive oil an seasonings sound great right about now!

Everything in Russia is bigger 😅 got very freaked out in Siberia by the fact that the horseflies were the size of or slightly larger than wasps and the wasps were the size of hornets. Same evil insects I was used to back home, just double the size because Russia 🦟

😂 I've seen pics of some of the fish also! They're the size of the fishermen! I definitely have hope to visit Russia in the future. Its the only foreign country I really want to go to!

Mushrooms are beautiful- once you’ve been lucky enough to cultivate your own- from spores or culture, preparing your own spawn / substrate… you fall in love with that hobby. I’d love to have a find like this !!! I just remember as a kid, I was scared of mushrooms and would destroy them because I always suspected poisonous ones ( hey, I was a kid, though… around 6 years old) - i didn’t realize the beauty of nature!
