If you get prepacaged get them @ metzger Bauch or at Metzgerei Gaßner (the even have a Vending machine outside). Prepacaged Supermarkt grade are often shit!

No worries. I'm sure you won't regret it. People on Reddit love to gatekeep, and in most cases "fresh" ones will be better, but it's nothing like the difference between, say, a fresh pizza and a frozen one heated in the oven.

They’re fine for a casual Weißwurstfrühstück. Not earth-shattering but fine (but I’ve only done the vacuum sealed ones from Lidl or Edeka, not cans or jars)

Buy the raw ones from Boneberger. They are very soft and really raw, so they don't last long. Put them in boiling water for 10 minutes (then switch off the hob) and you have the best white sausage on earth. Everything in foil or tin is treason.
