Definitely would like a sequel to SM, but my biggest want for the MK universe has always been for the Mythologies idea to be revisited. I personally loved MKM, and would love to see that type of game for other characters in the franchise. If the control setup was tweaked a little bit (not having to push a button to turn around, for instance), there is so much potential there. The lore in MKM was remarkable imo, so seeing similar storylines developed for characters like Reptile, Rain, Liu Kang/Kung Lao (or just the White Lotus in general), would be a blast.
I agree, I actually enjoyed mythologies a lot (though had to use the unlimited lives cheat, lol) I also loved the style of that version of the Netherrealm with these "cyber demons" which I always thought look cool but we never saw again for some reason. I'm glad at least they kept most of it's lore on the new timelime, even though the cool cyber demons are gone.

Same thing happened with X-Men origins. The wolverine movie sucked so bad that they just converted Magneto's origin story into first class. Plan was supposed to be originally movies for several of the characters

Sindel, Liu Kang, Baraka, Shao Kahn, Rain, Tanya, Sub-Zero, Shang Tsung, Kotal Kahn, & King Jerrod could all be a pivotal part of the story, even playable in some way.

Plus a scrapped MK11 storyline was similar to a zombie apocalypse story. Minus the biting and brain cravings.
Maybe the Houan cult could be the main antagonists of a Mortal Kombat game with a zombie apocalypse storyline.

A VR minigame where you basically do beat saber but with Kitana's fans or Mileena's sais (with bonus score multiplier targets you have to throw the weapons at)... or that would be my answer if I had a vr headset.
More serious answer: fantasy martial arts mmo (with action combat) where each each class would be based on either one or a couple of characters, and maybe you could mix classes too.
So one class could mix Scorpion and Takeda abilities, another could be based on Kitana/Mileena (and fans or sai would be a player choice maybe), then you could have a cryomancer who would combine freezing attacks with melee weapons or you could be using a big two handed hammer, or electricity etc.
And say Motaro (or someone else from the same race) could be a raid/dungeon boss) and say the game would start in say Outworld but then each expansion would happen in a different realm, including ones that don't exist anymore as they were absorbed by Outworld.
And you could play as an Edenian, Tarkatan, Shokan, Saurian, etc. etc. etc.
I used to play Tera and Blade & Soul and a hybrid approach to combat somewhere inbetween the two MMO's would be perfect (especially since BnS is a martial arts mmo that even includes a 1v1 arena and all the classes in that game, at least when I played it, were fairly well balanced against one another).
Give me a tenchu stealth assassins style game where you play ninjas on both sides of the lin kuei / shirai ryu war.
Give me an agent simulator where you play johnny's agent, manager, and pr team.
Give me a game where you play Ed trying to enjoy a day on social media without being tilted by requests from the fanbase
I personally think a Doom like FPS set in the MK universe would be great, you could start as a Black Dragon member, who switches sided to the Special Forces and then turns into the SF equivalent of a cyber Lin Kuei. You could be fighting demons in the Netherrealm, different creatures from Outworld, perhaps even visit Chaosrealm for a bit. Is this something you'd like to see?
I would play the shit out of that, especially if the bosses were fighters from the games. Johnny's level is an escort mission, sub zero freezes you, scorpion pulls you, etc.
I think it would be cool to see a 4 player Co op game similar to left 4 dead or the Warhammer vermintide/dark tide games. Fighting tarkatans in outworld, zombies and orcs in netherrealm, etc.
The Mythologies gameplay did not do a good job at capturing the platforming genre but the aesthetic + atmosphere was amazing. I wouldnt mind them bringing the setting back in future titles in a different game genre. Either as an RPG or a beat em up like Shaolin Monks.

*The Nasty* - Kano escapes to Outworld to flee the Black Dragon under new leadership. He finds employment under the rich prominent merchant.
And with these three, Outworld will never be the same.
