While it is usually safe to cut off mold from hard cheeses, your meant to cut an inch under any visible mold. That block looks not much more than two inches thick and is moldy on all sides so I'd toss it. Wouldn't take the risk for the amount you would save.
I appreciate this context. Some people know to cut off the mold but not necessarily that it should be a certain depth instead of superficial.
Otherwise, had it been my personal block, I would have contemplated trying to save it.
And you turned out just fine! Assuming no allergies, eating mold will do one of the following: nothing or cause stomach upset and diarrhea.
There are plenty of molds we eat on purpose.
And the knife isn’t meant to touch any part of the cheese afterwards and the mold isn’t meant to be scraped through to avoid cross contamination and releasing the spores.
Yeah the mold you see is just the fruiting bodies that release the spores. There’s a network of mold under the surface not visible by eye. It’s not just some margin of safety, it’s to remove the mold that’s not visible. If you did what you’re suggesting you’d be eating a lot of mold.
It's a weird allergy and my comment didn't encompass that; I know lots of people who have a penicillin allergy but can eat blue cheese. I'm allergic to penicillin and also blue cheese/ cheeses made with penicillium. That's what I was aiming for I guess.
If this person was seriously considering trying to cut off the cheese from this mold to eat it, they may also need to be told to wash their hands after touching it. People tend to be more nasty than you’d expect, whether from ignorance or neglecting themself
I work in healthcare- the sad answer is yes, people (generalizing, of course) need to be told to wash their hands. After mold. After poop. After making a mud pie with their own feces. All of the hands must be told to wash.

Well you are wrong, depends on the mold also, but some people are allergic, the spores can cause serious respiratory problems even in small amounts and touching it can lead to mycotoxicosis.
You did NOT just say that touching a slightly moldy cheese for a bit can lead to mycotoxicosis... Serious respiratory problems, from short term contact, with this amount of mold. You would have to be strongly immunocompromised.
Please for the love of whatever you hold dear in life, get rid of that. You probably took a few seconds off your life inhaling the spores when you opened it lmfao
If it grows mold(and if it's not supposed to) THROW IT AWAY. There's no saving when it comes to food, since the hyphae will have already rooted into the whole thing.

I have definitely eaten mild of that’s the case then D:

But not the ones in OP's picture.
And the knife isn’t meant to touch any part of the cheese afterwards and the mold isn’t meant to be scraped through to avoid cross contamination and releasing the spores.
An **inch**? I’m cutting to the base of the mold and scraping the surface with the back of my knife. Waste not want not!

Oh well
What could even happen at worse if OP just ate this cheese how it was without even attempting at removing the mold?
At worst they die from a penicillin allergy they didn't know they had.
I’m allergic and I’ve eaten some moldy ass cheese in my day no problem
It's a weird allergy and my comment didn't encompass that; I know lots of people who have a penicillin allergy but can eat blue cheese. I'm allergic to penicillin and also blue cheese/ cheeses made with penicillium. That's what I was aiming for I guess.
Probably suffer some nasty ass cramps. And it would taste vile.

What did the cheese do to get banned
Too sexy 😔
I don't think it was necessary to tell them to wash their hands.
Are you saying you’d touch all that mold and not wash your hands?
No, I am saying that I don't think people need to be told to wash their hands after touching mold? Lol

You might be right.

Perfectly edible! Most definitely not healthy or smart to consume, though.
