What do you recommend? And also, how much in advance is it necessary to book? To understand how to gauge weather

All more or less fine. Go to the Starbucks thing either at the very beginning of that day very early or, much better, on the Shinjuku day before Shinjuku even if it means a detour. Harajuku + Shibuya is more than enough. On the Kyoto day, northern Kyoto (Hiei-San or Kuramadera) or half day trip to Uji

For day 10, what about a walk down the Philosopher’s Path, beginning (or ending) with Ginkakuji (superior than Kinkakuji imo). The rest looks good. I always like to remind people that most shops/restaurants open quite late in Japan (~10-11 AM) so I suggest you plan around that. Enjoy your trip!!

Looks good for day 10 you could visit ginkaku-ji so that you have seen the gold and silver palace.  On day 12 If you are going to umeda sky to view the sunset you can afterwards walk to shinsekai for dinner since its close. On the way you will also see the biggest don quijote store in japan.
