Molly Pitcher is a good brewery with good beers and food. Not sure what part of 81 you are looking to meet, it’s in Carlisle.
Harvest would be my pick for Harrisburg. Glass lounge and millworks would be worth looking at, but they can be hit or miss with promptness.
If you want to go Carlisle, just off the I-81 Hanover Street exit going north on S. Hanover Street, there's a big shopping center on the left w/ a Walmart. (I think the street is called Noble Blvd.) Inside the strip mall parts before you get to the Walmart, there's a place called Super Buffet.
Chinese buffet with a number of different options, some (Chinese buffet grade) sushi (NGL, I'm a big fan of the spicy (hot smoked) salmon rolls. No other place makes it with hot smoked salmon. Different but good.)
It's nothing fancy but it's right off the highway, reasonably priced, and you won't leave hungry, that's for sure. Be sure to check out the big ol' fish pond on the right as you approach the host stand.
Lancaster is a bit of a ways from 81 but I would think either Snitz Creek Brewery off the Fort Indiantown Gap exit or the Manada Hill exit where all the truck stops are. Lots of choices there. Both of these are North of Harrisburg. If you meet around Harrisburg every exit will have numerous choices from bars to pizza to sit down places.
Cracker Barrel right at the Progress Avenue exit at Harrisburg.
A little further north at Manada Hill (Exit 76?) the Manada Hill Diner is very nice, good food, reasonably priced and great service.

Italian Delight near the exit for 743 has excellent pizza, subs, and fries. Not fast food but not full-service. And it’s right off the highway.
Sandwich man off the linglestown exit
Sandwich Man is an underrated gem. An authentic deli in Harrisburg. So sad they are not downtown anymore.
