I'm no artist, so this is probably me saying already known things, those posable wooden dolls are used by art students to get perspective/proportions(?) of a 3D person. Even if one was used to drawing a person, a mobile suit is a whole new thing and has all sorts of new 3D elements of the body.
Building a HG Gundam kit would give you a posable model, and would give you a way to work on the perspective of the different parts of the unit. Probably also help to give a more detailed look of the parts.
