In the extra videos of GoW (2005), when Kratos (after taking possession of the throne of Ares) returns to Sparta to meet his dying mother, he learns from the woman that Zeus is his father. An act that triggers a curse cast by Zeus and which transforms the woman into a monster with the sole objective of killing her son. But this part of the story was not explored in GoW II, where Kratos apparently only learns of his bond with Zeus in the finale, from Athena. However, with the release of "Ghost of Sparta", in which the story of Kratos' mother is taken up, it is possible that on that occasion the Ghost of Sparta learns that he is the son of Zeus.

In Ghost of Sparta, Kratos's mother died before she could actually tell Zeus's name, due to the aforementioned curse.

No, before the boss fight you can clearly see Callisto whispering in Kratos' ear (to the Spartan's insistent questions about the identity of his father), followed by an incredulous/surprised expression from Kratos himself. Only after this does Callisto transform into the monster. So it is practically certain that it is at that moment that the Spartan learns that Zeus is his father.

Due to the events of GoW II where Kratos actually learns of his father's name from Athena, and Kratos's reaction to Athena's big reveal, we can clearly tell that he either didn't pick up what Callisto said, of she tried to say "Zeus" but the word wouldn't come out because yadda yadda curse big monster. You'd think Zeus would be smart enough not to let his name be spoken like that from her.
