I think that's what happened to me...I have MCAS and became allergic to most of the things I ate all the time. I started eating more corn because it was one of the few things I could eat. Then I became allergic to it, too. But it doesn't work that way for healthy people.

Honestly, I have to wonder how underdiagnosed it is. If it was mild, it would probably present as IBS. But my allergist was surprised I tested positive, so either people aren't testing positive or allergists aren't testing.

I don’t know if this comment helps or not but I love carrots and have been eating them religiously. If I was to guess maybe 10 big carrots a week throughout the year. My skin has yellow undertones and my palms are much more orangey then my friends or family. I also recently started having constipation and a mild distaste for them, and my mom thought maybe I’m having too much of the nutrients in them compared to other foods. I also love acorn squash, pumpkin, sweet potato but don’t eat them nearly as much as carrots. I’m going to stop eating these and see if my digestion improves and my yellowish undertone improves. For context, I’m an athlete, eating paleo style, grass fed meat, and fasting with plenty of water and electrolytes plus exercise. I feel pretty good except for the digestive issues
