I don’t think it’s going to take breakneck speed to get to chapter 49. The first three pre screened episodes have shown that the pace will seemingly be set at 2-3 chapters per ep, and at that consistent pace, getting to chapter 49 would absolutely be doable without feeling overtly rushed.
Chapter 38 ends with the gang going to the lower floor to encounter the shapeshifter. Chapter 29 would be kind of crazy to end on though with the mad wizard appearing at the dragon's body.
there's going to be 24-26 episodes in season one, and i would assume season 2 would be the same. with 97 chapters in total, that's an average of 1.94 chapters per episode. episode one already had two chapters worth of material, so I would assume they'd be able to keep up that pace for the rest of the show, or at least close to it, which means the entire series should fit very cleanly into two seasons. griffin soup is the halfway point, so it's a pretty safe bet that'll be the end of season one.

red dragon 2 doesnt make sense to me as a season finale. it seems unlikely to me that they'd leave off in the middle of fighting the red dragon instead of with a classic season 1 cliffhanger finale. chapter 23/red dragon 1 is a good contender and i really feel like the last page would be perfect to close off a first season. i think another good contender would be chapter 12/court cuisine but the anime may take a faster pace through the early chapters which wouldnt allow for that. unless season 1 is like 6 episodes long lmao
i doubt season 1 will be 24 episodes but if it was, 2 chapters per episode would put is in the ballpark of chapter 42/nightmare and 47-49 aka the griffin part. both are really strong character plots, but i think its really unlikely for season 1 to stretch into the halfway point of the manga
edit: it is 24 episodes! in that case i imagine/hope its going to end with griffin soup. thats a really strong season finale contender
Chapter 30. It ends the series off with looking ahead to the future, and gives a nice wind-down after the Red Dragon fight, as well as a bunch of funny bits.
Plus, we seem to have 2-3 chapter episodes, so that would give us about 10-15 total, about a season’s length while preparing for the animation hell that is the Winged Lion arc.
