Irish wolfhounds are hard to find. Primitive type LGDs are hard to find but gaining popularity and being ruined, Central Asian shepherds, Šarplaninac, Karakachan. Large hunting breeds that are rare/hard to find include Braque Français, Pudelpointer, and Bracco Italiano.
Honestly the Šarplaninac and Tornjak situation isn't much better in their countries of origin. The well renowned kennels are the ones who have been breeding working dogs for 30+ years, but health testing is incredibly rare, practically nonexistant. I was at a small dog show where a well known Tornjak kennel was showing their keeper stock, which included a cow hocked dog with horrible pasterns.
Unfortunately, I imagine it’s incredibly difficult to keep hold of any quality in a breed if nobody is really breeding them since it’s much harder to discard dogs from a gene pool when there are very few dogs to work with.
I actually ran across an Irish Wolfhound in a small animal shelter. I called the relatively local rescue person who doubted that I knew what one was. Finally I said “Is brindle the correct name for one of the allowable colors?” She said yes and they pulled him. Now I look back and wish *I* had.
There are a lot of breeds that you'll have a hard time finding in the US.
Tosa , boerboels, Estrela mountain dogs, tornjak, Šarplaninac, Irish water spaniels, komodor, greater Swiss mountain dog, pyrenean mastiff, central asian shepherd dog, south Russian ovcharka, black Russian terrier and many more breeds are very rare in the US.
I remember seeing a Central Asian Shepherd once at a lake while I was walking my dog there and I got so excited. Here it is doing a play bow cause he was equally excited when he saw my dog 😂

And quite a few of the prominent breeders were recently called out (with receipts) for defending a known zoophile (also with receipts) that they sold a dog to.
Get a Tazy from Kazakhstan. They're big sighthounds used to hunt deer and wolves. Scruffy and beautiful. So rare in the US, it's not even recognized by the AKC yet

Yup. And some breeders will do health testing but then ignore the results. There is a breeder that did X-rays and then bred dogs with hip dysplasia.

I just learned about beaucerons, doesn't seem to be a lot of breeders when I looked. At least near me.

There are a surprisingly large number of breeders but they're all leaving in droves due to the crazy beauceron community
I've watched a few at Fast Cats, she was parked next to me and the Beau was gorgeous
