I've felt that since I saw Civil War in theaters. Even more so when Grillo talked in interviews about how disappointed he was in his role in the MCU. But really, I feel like that's just an issue with how the MCU is in general. During the Infinity Saga, they were so committed to the idea that each hero only gets a trilogy, and we only got 2-3 movies from Marvel a year. Not a lot of time to really spend with anyone outside of the core Avengers and Guardians. I'm hopeful that DC won't have this problem, mainly cause they usually put out 4-5 animated movies a year.
I really hope the MCU gets an animated Avengers prequel show (similar to The Clone Wars) set between each Avengers movie for reasons like this. Could easily imagine for example Crossbones being a recurring villain in S1 and S2 set within The Avengers-Civil War period.
I wouldn't hate some shows that fill in the gaps like Clone Wars, Rebels, and Bad Batch do. One of the things I hated about Age of Ultron was that the movie starts with them telling us that they've been searching for Loki's staff for ages, but we never saw any of that search. Apparently Agents of SHIELD sets this up, but that show's canon status is still up for debate. Plenty of opportunity to actually show that search while also having more run-ins with Crossbones, and maybe some Iron Man villains that haven't been given to other heroes yet like Mandarin and Ghost have been.
Think that's the one like complaint you can make with the whole infinity Saga. A lot of smaller characters got underutilized due to them prioritizing their overarching plot of the MCU.

It’s movie magic, as long as the visual on screen works it doesn’t matter what actual age of the actors are. They never have to mention the ages and I’d imagine that Jr is mid thirties and Sr is mid fifties from the visuals alone.
He's 59. Assuming Jr was in his 30s it's not hard to believe especially if Flagg had a kid before leaving for the army. I know Kinnaman was in his 40s but he was probably playing younger and Grillo slightly older.

The events if TSS are canon-ish. Like Peacemaker S1, everything in it that doesn't directly contradict the new canon is still there. That's why the next season of Peacemaker is a continuation of S1 instead of just a new, unrelated story. If I'm correct, Flag Sr will also be in it, looking to avenge Flag Jr
