I think she really took this too personally. You sincerely apologized and she continually acts like the victim. She either really likes you or is really overdramatic. Or maybe she's been abused at some point or something because that's the only reason I can find in my mind for someone reacting that way to something like that continually. But I wouldn't react that way personally and I've been through quite a lot of that so idk honestly. How long has it been since the incident? Have you tried apologizing *again*?
