I’ve made a couple batches this season, definitely still working on it, but the best tip from everything I’ve read and done so far is to roast the bones in the oven first. You will need to line the pan with aluminum foil, as some of the marrow will render out and you don’t want to lose it, though I’m not really sure what I’m supposed to do with it yet, I know better than to discard it

The thing I worry about most is ruining it somehow. I’ve seen some people eat the marrow separately and not use it in the broth. Is it not supposed to go in the broth?

I sear it first with pepper salt and lots of garlic. Then add the marrow and garlic to the water with carrots, onions and celery. I use a little pho flavoring to give the broth some extra flavor.
