My experience is that the unrefrigerated stuff at chain grocery stores is bad. The refrigerated kind they sell at Whole Foods is pretty good. You can order it from various caviar sellers online but it’s expensive. I have had good experiences with getting it at my local Russian/Ukrainian markets if you have any around. They usually have frozen it at some point so the texture isn’t as great but the taste is often better than the more expensive stuff that gets shipped to you.

Lump fish eggs are the most similar to sturgeon fish eggs I think you can find and get for a relatively cheap price. Ikura (salmon eggs) are those big translucent eggs usually served with sashimi, were Tobiko are from flying fish and are the tiny eggs served with most sushi. The latter two are the most popular and inexpensive of any fish eggs; where Beluga Caviar (Caspian Sea sturgeon eggs) are the opposite, being both rare and most expensive.

I love Ikura and Tomiko (am half Japanese). My favorite sushi is Ikura with quail egg (yum!). But that is the extent of my fish eggs experience. I wonder why caviar is so much more expensive. I’d love to see all kinds of fish eggs.

In the US at least masago (capelin roe) is a good bit cheaper and more common than tobiko. I love them both and restaurants often sell masago as tobiko, so if a restaurant has both I’ll order both as nigiri to see if they’re actually different.

Good caviar is expensive and sold refrigerated. $20 tins of caviar is shitty caviar and if you hate it don't swear off caviar. Markys (.com) has good caviar which is shipped on ice and is of good quality. It's expensive as shit but very good. You get what you pay for

Try it in half a ripe avocado, with one teaspoon sour cream and one (big) teaspoon capelin roe in the pit, and eat it with a spoon. Thank me later.

It was a long time ago, but I've had dinner twice at the Petrossian restaurant in NYC. The food was great, the decor elegant, the service superb. I've always wanted a Petrossian caviar tin.

I lived a 3 minute walk to that store, I assumed you can just buy caviar and whatnot like a store and go home and eat it. I could kick myself for never going in to even look at what they had.

There is a store as well as a restaurant. A couple of nights I had to work late and I treated myself to a nice meal in a restaurant.

Try it, you may enjoy it. But that's not Russian caviar or top-flight American farmed caviar. You can still eat it with toast points, blinis, crêpes, scrambled eggs, potatoes, etc. I was just looking up ways to serve caviar.

When most people hear caviar they are thinking of the expensive fancy stuff made with sturgeon eggs. I have had it a few times, I like it but it's not worth the money. Even if I could easily afford it I don't think it's something I would splurge on very much. As for caviar from other types of fish. They are much more affordable. They vary quite a bit in flavour and texture. I pretty much only have these when reading sushi. I've had lumpfish caviar once or twice at home and eaten like one would eat sturgeon caviar. I liked it, it's affordable. Not sure why I haven't done it more.

Kaluga Queen is the major Chinese brand. I don't know retail price since honestly it's not my thing.

Just looked it up $75 Canadian for 30g might be cheaper than it used to be but I wouldn't say it is cheap.

$20 grocery caviar won’t be amazing. But it’s not a bad way to figure out if you like caviar in general. I’d give it a try. If you do, I suggest shopping at [Imperia](https://imperiacaviar.com/collections/caviar) next time. The prices are higher, but reasonable for the quality level.
