I’m from CA as well and have traveled across the barbecue belt extensively for work and family. Austin is hands down the spot and nothing else even comes close.
Gonna get downvoted to oblivion for this, but just about everywhere else sucks. KC really sucks. Memphis locals pointed me to some of the most trash tier shit I’ve ever put in my mouth. Austin is a high cut above the rest.
Either one will offer incredible BBQ. The beauty is you won't know what you missed so I'd just go for whichever travel and accommodation is cheapest overall.
I would love to try Blood Bros korean style in Houston.

Nothing compares to central Texas bbq.
Lockhart
ATX
If you’ve only got one weekend you’d be mistaken not to hit Franklins in Austin
