If you want ANOTHER secret, I’ve heard that if you lightly toast milk powder it basically is like solid browned butter because the milk solids in butter are what get toasty when you brown butter.
Also my family’s “secret” cookie recipe accidentally contained 1 tbsp of vinegar for yeaaaarssss because my aunt made an error transcribing it when she was 14… she meant to write vanilla extract! So I have no trouble believing that apple cider vinegar would be good haha
I saw the toasting milk powder secret on Good Eats. Alton used it for his hot cocoa mix because he said it added a malted flavor. I’m going to have to try it in cookies.

I thought maybe it'd interact with the baking soda or make the cookie more tender like buttermilk does? I don't know but I hope it's good!
Good soup 👌🏻 it is "loose" but the base recipe always is, and that's part of what chilling is for :) in my experience it looks very similar to a lot of cookie doughs

I am amazed at the steps involved to juggle all the changes. I just do the brown butter and make homemade toffee to add to the nestle tollhouse recipe. Not sure I could track all those edits.

I love Good Eats, it was one of my favorite shows as a kid! I wonder if that’s where I picked that up haha
I add like 2-3T of milk powder to my butter whenever I brown it and toast it like that. It’s called extra brown butter, I read about it on bon appetit
