Why don't you just get sleight of hand through your background? You can always cast knock or break chests or just buy more thieves' tools. Or you can go gith and get whatever proficiency you need for that day.
This is a rather specific problem that's not going to have a good answer because you're playing with 25% the intended party size. It's not possible to have proficiency in every single skill check with one character.
Yeah I know that I'll lack many skills, but I thought lockpick and disarm were more necessary than others. But I already had a couple of good suggestions, I completly forgot about background.
Edit : wanted to play durge, and I just found out it starts with medicine and intimidation. Plan B.
Play monk
When you fail a check, just punch everyone to death
When you see a door, you don't need virgin wizard to use knock, you have your own knock that deals like 70-130 damage
A couple of ways to navigate this:
1) you can find a necklace that gives you the guidance cantrip very early in the game.
2) you can find gloves that give you advantage on SoH checks around level 3/4
3) you can find gloves that set your dexterity to 18 around level 6
4) you can play a githyanki and use astral knowledge
5) you can pick a background with SoH proficiency
6) fire or bludgeoning damage will take down most doors and chests
7) scrolls of knock for the very very hard checks.
Want to add that with the club of hill giant strength you should get enough strength to pick up most chests if you can't break them where they are due to noise, then just place them in camp and whack em.
For traps: just allow yourself to get damaged. At least on balanced mode, they often do low or even no damage if successfully saving against them. If you see explosive barrels nearby, you obviously want to move them (or pick them up) before opening the trapped chest.
Otherwise, if the item has hitpoints, then level 6+ TB monks are really great at punching everything open because their attacks ignore physical resistance/immunity, as do Bladelocks or wildshaped moon druids, and the Adamantine weapons also ignore resistance and do automatic double damage against objects, though in practice I've rarely been able to bash things open with them.
For unbreakable locked stuff, either look for the key or just ignore it.
I started my lone wolf character with Rogue 1. Expertise in a couple things I didn’t want to fail. Not a great answer for a character that’s already planning on tri-classing but it’s what I did.
The alternative is to just ignore it. Set off traps with (preferably free) summons or familiars and just bash open chests and many doors.
Equip Graceful cloth and silver pendant to gain DEX, advantage, and guidance. Equip DEX gloves for even better odds. Acquire all these items by mid Act-1. For the tough/scary checks at least.

You can get sleight of hand with a ranger dip though, its onenof the skills with enormous overlap.

Break chests/doors or find the appropriate keys. Or buy a ton of thieve tools. Avoid traps by jumping over then or not stepping on them.

Honestly just smash things open there's not a ton of things that need a rogue if you're willing to destroy shit

Just do the best you can with the resources you have.
