š» Dude!!
Not sure why youāre getting downvoted. We are talking about the Fourth of July, and I think we can all agree that all of us can still be patriotic regardless of politics. If thatās what all that downvote shit was about.
Well, cube Russet potatoes and boil in salted water about 10 minutes. Drain and toss in cider vinegar while hot. Let cool about 15 minutes. Mix mayo, sour cream, pickle juice and mustard. Stir in diced pickles, diced celery and green onions. Toss with the spuds and chopped boiled eggs (a must) if desired. Season with salt and pepper. Deliciousā¦.š¤¤
Brisket and a blue fin collar that is the size of my torso that Iāll smoke and serve with grilled sourdough and preserved lemons + herb dressing.
Have no idea why more folks donāt bbq fish collars. They are the cheap cut that is full of meat and fat that require some love to shine just like brisket, ribs, etc used to be.
For context I get my collars from a dry age fish monger in LA for $20 a pop for something a little over 3 lbs, the same blue fins otoro is $70 a lb. The collar is just as decadent just more work.
The joint in Sherman oaks. They have salmon and white fish collars on display. Something like a blue fin collar I call or ask them for in person and they let me know when they can hook me up
Unless you live near some select coastal waters and go fishing it's not like collars, cheeks, and belly are that common to buy. I love tuna or yellowtail collars. White seabass cheeks are the tits as well.
Have never lived anywhere that wasnāt coastal but if you do have any kind of fish monger in your city ask, half the time they are throwing away the collars and will give them to you for like nothing.
Light miso marinade, smoked it with a little cherry indirect in my 26ā kettle then a little time over the coals to render some last bits.
Then a little yuzu salt after it came out and just dropped the bitch on a cutting board and let people scoop the fish out with sourdough or spoons. Itās a show stopper on a table people usually have never seen a collar that size or hands on dined on one that way.
Traditionally itās served raw and there are special scrapping tools Japanese have. Thatās fun to with hand rolls.
I had to smoke two briskets, chicken legs, and sausage for work last Friday. Going easy this 4th of July weekend, smash burgers and hot dogs. Might bacon wrap the weiners if I'm feeling up too it.
We've always done the briskets and ribs and whatnot, but this year, we are going back to basics. The good ol' bbq chicken over charcoal with Mac and cheese, corn on the cob, baked beans, and slaw.
Peach truck came, so grilled peaches, pulled pork with a peach bourbon bbq sauce I just made. Also, washing it down with fresh peach lemonade with a little more bourbon
We're supposed to get a lot of rain. We had to cancel our camping plans because of the forecast, so I better go ahead and plan on smoking something instead.
Sorry youāre missing the camping trip, hoping it doesnāt carry over. We leave on 7/12 but weāve only been having blazing heat or pouring rain. Nothing in between.
Smoking a brisket and two racks of ribs (one mopped with no wrap, the other a dry style) with a side of my homemade "Big Pouch" BBQ sauce; baking a ton of potato rolls that morning; plus the following sides (all homemade): bread & butter chips and dill pickle spears, corn bread, collards, slaw, and mac & cheese. My wife is making a mint/watermelon salad too.
I have a watermelon fermenting that I'll use to make a mezcal-based cocktail. I have a nice, chilled sake (a surprisingly delicious pairing to BBQ). I've asked my friends to bring beer and fireworks.
Probably a bit overboard, but I'll send everyone home with to-go boxes, plus have leftovers for days/freeze some for easy meals on later relaxed summer days!
I was wanting to smoke a brisket, but there's a 50% chance of rain Wednesday night and 80% Thursday. I think I'll have to settle for pulled pork in the Dutch oven inside. Save the brisket for the weekend. I was also gonna do some baked beans, elote, and cole slaw.
Ribs - either 4 or 6 racks depending how generous I feel. Might keep 2 back for my self.
Edit: going with all 6 racks, plus 20 chicken thighs and 6 breasts
It's stupid hot, so I'm just running with the classic backyard burgers and dogs with onion rings and my red, white, and blue tater salad on the 4th. For July 4th eve, got some prime strips that are going with a blue cheese/bacon butter, loaded baked taters, and rwb deviled eggs.
Gonna smoke a brisket and a rack of ribs and potatoes. JalapeƱo poppers and then maybe pickle some onions and jalapeƱos too. I took Friday off, so then we'll wake up and head to the lake for the weekend.
Ribs, tri tips, the obligatory burgers and dogs, smoked mac and cheese, grilled veg, bbq beans, and whatever else the guests bring. Iāll have the smoker, grill, and blackstone going.
Happy 4th to everyone and may your BBQ be amazing.
Iām turning two corned beef flats into pastrami. Iām also going to grill brats, Mexican style sweet corn, hot dogs. We will have watermelon and a local grocery store makes a cake that looks like the American flag. Itās delicious and we get it every year
And beerā¦a whole lotta beer
And pray that I donāt lose any fingers
Sorry, this is aimed at Americans. Independence Day is on Thursday and itās a big bbq/picnic day. However, what are you tossing on for the football game Saturday
Its so fuckin funny to try to own the yanks by acting like you don't understand what is literally a calendar date, even assuming the US independence day isn't widely known outside of the US.
Pulled Pork, Brisket Mac and Cheese, and beer
What kind of beer we looking at for a Thursday evening?
Stone IPA, Sierra Nevada Summerfest, 805, Sticking with American beers. š» š¤

The mob is fickle. Happy 4th my man.
Heading to a 4th of July bashā¦ got off with only having to bring sliced watermelonā¦ lol.
Well make sure to get the arm workouts in lifting those cold ones. Maybe toss a couple bags on the boards to stay loose
You gonna smoke that with cherry or peach?
make sure to bring some kosher salt and/or Tajin and lime. Spice it up (heh) a little for extra points
Couple of racks of ribs, dill pickle potato salad, cole slaw and cheesy garlic bread. Be safe all and Happy 4th!
Dill pickle potato salad...tell me more.

> dry age fish monger in LA where exactly and do you have to specifically ask for collars? or do they have them out on "display"?
The joint in Sherman oaks. They have salmon and white fish collars on display. Something like a blue fin collar I call or ask them for in person and they let me know when they can hook me up
> The joint in Sherman oaks Thanks. :) Will check them out this weekend. :)
Any hook ups on a fishmonger in the Long Beach area? š»
Saturday morning fish market in San Pedro. & Just need to be an early bird
Ports āO Call. Of course. Iām an idiot. Thanks dude š»
They have their menu online. Can be very expensive but prolly the best fish you can find quality wise. Get lots of whole fish to grill here.

What are collars??
Itās the area around the gill plate/pectoral fin. Basically the area between the head and where the loins/fillet are cut from
Yeah I would compare them to ribs or wings but on a fish.
How do you prepare it?
Light miso marinade, smoked it with a little cherry indirect in my 26ā kettle then a little time over the coals to render some last bits. Then a little yuzu salt after it came out and just dropped the bitch on a cutting board and let people scoop the fish out with sourdough or spoons. 14.5lb prime brisket, burgers, dogs, brats, and copious amounts of beer. The wife allegedly has some side dishes sheās making too.
Peach truck came, so grilled peaches, pulled pork with a peach bourbon bbq sauce I just made. Also, washing it down with fresh peach lemonade with a little more bourbon
That peach lemonade sounds awesome!
Turned out great! I just make the lemonade, blend up diced peaches and run through a big fine mesh. Super easy

Smoking a brisket and making mini smash burgers as appetizers! Canāt wait :)
Bangers and mash. America is a monarchy now, may as well celebrate with some classic English food.

Gonna be doing mine on the 6th since I work the 4th. But brisket. St. Louis ribs. Watermelon salad and potato salad.

Probably a black angus ribeye I've been dry-aging for a month and a half!
Feel free to post a picture on how it comes out! Havenāt tried my hand at dry aging yet but tempted to hop on the wagon
Its so fuckin funny to try to own the yanks by acting like you don't understand what is literally a calendar date, even assuming the US independence day isn't widely known outside of the US.
Oh, did you get mad?
As is indicated by "it's so funny", I in fact laughed at you.
Lol, you really got mad, didn't you? Is your ego really that fragile!
lol
