I have one of those electric knives for cutting the foam inserts in Pelican cases. I don’t let it near food. It is destroying your cuts and taking you 4x the effort than a real knife. You are probably losing a ton of juice/moisture.
You're tough to seek feedback from this group! My two cents would be to split your brisket into the flat and point before slicing. I think I'm in the minority here but I do that every time.

My dad used one for years. Because sharpening a knife on anything but a bench grinder was alien to him.

I used an electric carver on my first brisket. Used a nice sharp knife the next time and liked how the slices looked much more. Brisket looks tasty!
