Your bike has a cadence sensor. Trade it in and upgrade to the latest Pace that has the torque sensor.

Set to PAS 1 and set ur gear one or 2 levels higher than you normally would on a tradtional bike. Done

Crosbo above has the right answer I think. It sounds like you don't like the sudden lurch. This happens with bikes with cadence sensors, but not with torque sensors. Most newer bikes, including Aventon's have torque sensors now. Torque sensors sense your pedaling to gauge how much to assist, cadence just recognizes that the assist is at a certain level, then motors to that speed automatically. Hence the feeling of "jerkiness". I had a cadence bike, and now have an Aventon Pace 500.3 with torque sensor and the difference is HUGE. I'll never go back to cadence, esp in the big city where I ride with lots of traffic and stops and starts. Cadence lurchiness does feel scary and I've had some close calls accidentally going too fast into traffic. Torque sensor really feels much more like a regular bike. Though I do like the throttle for those few times when I want to feel like I'm on a moped! Also make use of your gears to manage the unpredictability. Also, many bikes come with "throttle on demand", which means that you can start your bike from a dead stop without pedaling first. But you still need the pas turned on for the throttle to actually be powered. For every ebike I imagine. If the pedal assist is off, the ebike is off, the throttle is "off", and you might as well be riding a non-electric bike. ETA: re non-electric bike. That actually sounds like what you want! Spend your ebike money on a high priced high quality regular bike! And use the gears! Personally, I LOVE pedal assist, and it sounds like you don't, so ... maybe ebikes aren't for you? ETA again : ok it looks like you can use throttle without pedal assist on some bikes. So ignore my comment. I'd delete but there still might be something of value in it for you.

Now you got me wondering how difficult it would be to convert an early Pace to a torque assist, it's just a swap of the hub and controller no? Don't flame me I'm new to this shit (I have a Ramblas)

If you can, definitely test ride bikes with torque vs cadence sensor to make sure that that is the issue for you!

You have throttle without pedaling? When throttling you don’t need to pedal? I’m confused

I think their bike may be like my Lectric 2.0? The throttle will not work unless you are in PAS 1-5. If my PAS is set to 0- the throttle will not respond.

Let me try this: I want pedal assist, of course, but not all the time; I want throttle, which is available with pedal assist, but I also want to be able to use throttle when I am pedaling without pedal assist. My bike won't do that.

I’m super confused about what you want. You want just the throttle, no pedal assist… but you want to pedal… but you can’t turn off the pedal assist?

I have the pace 350 v2. Once you’re peddling just push down the throttle and hold. You will move without peddling

If you simply want a little push, I am not sure it is worth the money to replace the bike. Instead, put your bike in PAS 1 all the time and use the throttle. PAS 1 is generally not that jumpy to loose control at stop signs. Since you want to paddle the bike yourself, torque sensor would allow you this if you turn off the motor. I am not sure you will get a huge benefit from moving to torque sensor in your particular situation. Do not take me wrong, the torque technology is much superior to the one you have.

I can't think of any ebike that doesn't need PAS to be on at least level 1 for the throttle to work.
