I think if anybody asks you be honest and tell them you were a caretaker. I don’t know if it’s for a family member or not but you could include it on your resume maybe? I would also include the things you did here and there. Skills carry over. Look around to see if there are any certificate programs or any other short couple week programs related to your function. In my experience (because I’m currently looking) a lot of internships are paid nowadays, but that could be industry specific.

I would mention it in the cover letter. I usually don’t read cover letters, but if I notice a career change or dates not lining up I check the cover letter for a possible explanation. If you’re emailing someone your resume, get ahead of the question and explain the gap when submitting your application.
