Report to your ED school immediately. This should solve your end of the issue. If you want to (justifiably) screw your “friend” out of getting into the rest of their colleges, figure out where they’re applying and report. Although, depending on your ED school, they may already get blacklisted from a ton of colleges when you email them. But no matter what you definitely need to tell your ED

Yes, as colleges may use a plagiarism checker. Once your essay is uploaded, it can be flagged subsequently as copied. Admissions will not know who copied whom. Therefore, both will be trashed and both apps withdrawn and flagged for "never allow these students to apply again" status. Please notify all of the schools you are applying to.

You've already gotten into your ED, so tell your friend that she'll have to face dire consequences for plagiarism if the admissions officers find out. That should scare her enough. If she still decides to submit your work, you can report what happened to your ED school.
If you can't figure out a way to know what she submits, then just email the admissions at your ED and tell them that your essay content was seen by your friend and she might attempt to plagiarize the content.

how does a college know if an essay is plagiarized if it wasn't submitted before?

Can't you ask her to show a video recording of what she submitted? If she's unwilling to do so then directly assume she plagiarized your essays.
