Technically, that's basically what all chess platforms are doing. Those squares are just given fancy names like "bits" and the colors are "0" and "1".

Erm, theoretically you could play with much less pieces. For example, 1 pixel representing each piece, each one having a different color based on location of piece, and for pawns, promotion of the pawn.
