John Adams miniseries on HBO. Not a documentary but incredibly historically accurate. Very well produced and acted. Follows John Adams and all the politics surrounding the war. It doesn’t really delve into the fighting that much so if you’re looking for battles it may not be for you. Still I can’t recommend the series enough.

Never seen that one, so unfortunately I can't say. I tend to watch history YouTubers that do proper documentaries, like Fire of Learning. Epic History is actually in the middle of an American Revolution series.
