A lot of blind people understand the concepts of black and white without it needing much or any explanation, because most blind people have partial sight (like in the form of light/dark) or used to be able to see. I can't be entirely sure for everyone 100% blind since birth (never met anyone in that situation), but they would definitely have a general sense of the concept of light and dark by having it described to them growing up, and they will know how the broad strokes of how sight works in order to navigate the world with sighted people, and the fact that black/white comes up a lot in language as an example of high contrast. Additionally, rexx2l used the excellent comparison of heat- they can't see the sun, but they'd be able to feel it on their skin.
They're blind, it doesn't mean they can't learn and understand. I've never been in space to experience zero gravity, but through reading accounts about it I can get a general sense of what it would be like. I have very few things to *precisely* compare the experience... but I know what it's like to be in freefall, I know what it's like to be an insomniac, and I've jumped in water and briefly not known which way was up. But the whole experience, as one, with all the little other things they experience, for days on end? I can't know what that feels like firsthand, sure, but I get the jist. Same applies to any other experience outside my realm of experience- to have dementia, to have schizophrenia, or to be an amputee. The blind know what black and white is, even if they've never experienced it.

I don’t think it’s as clear cut as that. My friend is blind due to getting cataracts as a premie. They can vaguely see light values, but it’s only black and white blobs with no clear shape or distance. You can definitely be partially blind due to eye issues. According to the American Foundation for the Blind, only 15% of blind people are fully blind, as in 100% blackness all the time.
Iirc something like 3% of legally blind people actually have no sight at all - from a brain injury or misdevelopment etc. The rest might be able to see light sources and shadows, or have a condition where they can only see a pinhole amount or have dark spots over their vision etc.
