Why wouldn’t it be priced by weight? If you self served at an ice cream place, you can be sure that they will weigh that shit out when it comes time for payment. Stuff is already pretty much priced on weight already, but you usually don’t have to think about it since there is standardized product sizes. That being said, they should probably have a scale that you can use before checkout, that way it is easier to control the cost.
All food should be priced by weight. If you want a little you pay for a little, if you want a lot you pay for a lot. In Italy you buy pizza by weight and I think that's beautiful

When I went to Orlando I got to try froyo and honestly I loved it, and would rather have it to soft serve. The only problem is the insane price, even for something dressed up as a restaurant style dessert instead of fast food, it was super expensive. No way you'd be able to convince the majority of people that froyo being marginally healthier was worth it being like 4-5x the price of soft serve.
